In /etc/inittab do you have a line like:

x:345:respawn:/usr/X11R6/bin/{prefdm|xdm -nodaemon|gdm}

You said you already adjusted the "id:5:initdefault:" line to 
read 3. If you have a line like the aforementioned did you take 
the "3" out (representing the runlevel you don't want GUI logon 
with).

Runlevel 5 is for servers meant to be X session managers, if 
Debian is providing that at runlevels other than 5 I think
they have a serious standards compliance/interoperability
problem.  In general it seems that Debian feels free to
deviate at will, my recommendation is to avoid at all cost,
your life will be easier. 

(Note: To all Debian lover's,  diversity of opinion is the
proof of free society, your free to say that RedHat sucks,
so no need to flame/retaliate).
