I'm guessing that you're low on memory.  Do some "free"
commands to see how bad you're swapping.

I have a P2-350 / 128MB running IMAP for a couple dozen people
(including myself) just fine.  Stock Redhat 6.2 IMAP/sendmail.

I'm also running Apache with IMP (web based email) on the same
server.  Very snappy.
